Taken from the french board, probably known by most of us, but still useful imo

Agility

Each point increases armor by 2
Increases the chance to deal a critical strike both melee and ranged. The increase depends on both the class and the level. For most lvl60, 20 agility = 1% crit. Rogues need 29 and hunters 53 but they also increase attack power with agility and their equipment has generaly more agility.
Increases your chance to dodge. The increase depends on both the class and the level. For most lvl60, 20 agility = 1% dodge. Rogues need 14.5 and Hunter 26.5, but hunters have an aspect to increase dodge.


Strength

Increases your attack power by 2 for 1 point. Rogues only get 1 attack power per point, but they also gain attack power with agility.


Defense
Increases the chance of an attack being missed. (hope you understand that sentence...)
Increases your chance to block, pary and dodge an attack.
Decreases your chance to be victim of a critical strike.
Decreases your chance to be victim of a devastating strike. Mobs with higher level than yours can deal a devastating strike. The bigger is the gap bewteen the level of the mob and your level the higher is your chance to be victim of that kind of strike. Only mobs have this skill.


Attack power
Increases your DPS with melee weapons. 14 attack power = 1 DPS.

For hunters and rogues, melee attack power is split 50/50 between strength and agility.

On my hunter I noticed that 1 agi = 0.15 ranged dps at around levl 53.

and just in case anyone is wondering

1 Stamina = 10 hit points
1 Intillect = 10 Mana ?
